Spinach is an annual green belonging to the Amaranthaceae family. Palak ki Sabji is fast-growing and can be ready to harvest in as little as one month after it’s planted as seeds. In most climates, it grows best when planted in the winter.
According to a research, palak ki sabji is a good source of minerals (iron, copper, phosphorous, zinc, selenium), vitamin B complex (niacin and folic acid), ascorbic acid, carotenoids (ß-carotene, lutein, zeaxanthin), phenols (flavonoids, p-coumaric acid), apocynin and Omega-3-fatty acids.

How to Grow Palak ki Sabji?
Growing palak ki sabji is really easy from seeds.
- Get seeds from a nursery and soak them in water overnight.
- Sow them in a well draining potting mix the other day.
- Water well and place the pot where it gets plenty of bright but indirect light.
- The seeds will sprout in 2-3 weeks.

Requirements to Grow Palak ki Sabji
For best growth, make sure the plant gets a mix of bright sunlight and shade. For this, choose an eastern location where it can bask in the mild morning sun for 4-5 hours and gets protected from the harsh light of the afternoon sun as it can scorch the leaves.
Spinach prefers a reasonably neutral soil pH for optimum growth. To boost the quality and taste of the leaves, amend the soil with organic matter, vermicompost, and a handful of cow dung manure at the time of planting.
Water palak ki sabji only when the topsoil feels a little dry to the touch. Also, do not sprinkle the water on the leaves as it may attract fungal issues. Regular watering is perfect in warm weather to prevent bolting.

Palak ki Sabji Care
As the plant is a fast grower, it is recommended to provide a good amount of fertilizers. Feed it with a high nitrogen fertiliser, once in 3-4 weeks. Do follow the instructions on the label.
A monthly dose of fish emulsion and soy meal are good organic choices for spinach.
Pests and Diseases
Be careful of downy mildew (blue mold) and fusarium wilt. Make sure the plant gets plenty of air circulation and sunlight to keep this problem at bay.
Aphids may also attack palak ki sabji. For this, check the plants regularly, and hose the pests off immediately if you find them.

You can start harvesting spinach in four to six weeks after planting seeds. Start doing this when you spot the leaves becoming large and tender. Palak grows in cut and come again method so the more you will harvest it, the bushier it will become.
While sniping the leaves, use a pair of scissors to ensure you are not harming the plant. You can also cut down the whole plant at once if you want.
Spinach can be eaten fresh or cooked. The leaves are sensitive to ethylene gas given off by many fruits, so don’t store spinach in the refrigerator in the same container as apples, melons, or tomatoes.
